"A great performance! Thank you for your expertise at Richie's 41st
Heather Locklear, Los
"Panache doesn't begin
to describe the sight of Catherine Fallis sabering a bottle of champagne.
She steps forward in a black evening gown sliced thigh-high, her
face framed by cool black shades, her chestnut mane sweeping across
her milky shoulders. She dons a pair of python-patterned opera gloves.
She draws the black-handled saber, inhales and then lifts the champagne
skyward. A few quick strokes of the blade sever the neck and cork
from the bottle, and they sail serenely away."
Jonathan L. Wright, Reno-Gazette
"You are this unusual
combination of quirky and refined. I loved your champagne presentation
and sabering at the Bubble Lounge!"

"In 1997, Fallis became
only the fifth woman in the world to achieve the title of Master
Sommelier. But don't let the lofty title fool you: She's very down-to-earth
and a staunch opponent of wine snobbery."
Laurie Daniel, San Jose
was terrific. You really know how to 'wow' the crowd."
Carissa Chappellet, Chappellet
Vineyard, Napa Valley
a consultant sommelier, is one of the faces leading the changing

New York Times
manages to maintain perfect balance: she is an expert in her career,
she appeals to my customers at all levels; she is both fun and professional."

Master Sommelier Catherine Fallis
invites you to share in the celebration of life through her unique
expression of joy sabering a bottle of champagne.
In times of triumph, Napolean's gallant soldiers opened champagne
with a strong blow from their swords. Today, Catherine continues
this dramatic tradition, delighting guests with her thrilling, festive,
and safe technique. A hush falls over the crowd as she dons her
gloves and draws her saber. She inhales deeply, preparing for the
task before her. She lifts the bottle high, and, with a few strokes,
sends the cork soaring into the air. Glasses are filled, and your
joyous occasion is off to a great start.
